Sourdough Buttermilk pancakes

These are a weekend favorite in our house and a great way to use up discard sourdough starter.

I don't like wasting sourdough starter when I discard prior to feeding. This recipe is a great #nowaste option where you use the starter for flavour rather than its rising potential.
Sourdough pancakes
1/2 cup wholemeal flour
1/2 cup plain flour
2 teaspoons baking powder
1 1/2 teaspoons bicarbonate soda
1 teaspoon sugar
2 eggs (lightly beaten)
1 cup buttermilk*
2 Tablespoons butter, melted
1/2 cup discard sourdough starter
Method
Combine flour, baking powder, bicarbonate soda, and sugar in a large bowl. In a separate bowl mix eggs, buttermilk, sourdough starter and butter. Add wet ingredients to dry ingredients and mix until just combined. Batter will be lumpy.
Preheat a pan to medium heat and butter. Add a portion of pancake mixture to pan and spread. Cook until lightly browned on one side and bubbles appear on the surface. Flip and cook other side. Serve with butter, maple syrup or fruit.
* You can substitute 1/2 cup of unsweetened greek yogurt and 1/2 cup milk for the buttermilk.
For Easter we like to make bunny shapes!
